Mmmmm breakfast for dinner...always a hit at our house. the kids had their best friends O & C over and this is what we decided to serve for dinner. With icecream on the side...cake and icecream for dinner...I'm now the coolest mom on the block!~LOL  Enjoy...this is out of my clean eating magazine...so only 285 calories per serving (3x4inch piece)
recipe:
13-14 slices of grainy bread (i used vitality from lac la hache bakery)
1 cup low fat ricotta cheese
1/2 cup cream cheese ...low fat
4 large eggs
2 tbsp maple syrup
1 3/4 cup blueberries
1 cup milk
2 egg whites
2 tsp pure vanilla
1 tsp cinnamon
1/4 cup unsalted raw almonds-crushed
1. spread 1/2 the bread along the bottom of 9x13" pan.
2. in blender; ricotta cheese, cream cheese, 1 egg, 1 tbsp maple syrup. Spread over bread and then layer with blueberries and then another layer of bread.
3. blender' remaining ingredients; 3 eggs, milk, vanilla, cinnamon, maple syrup
4. pour over and sprinkle with nuts
5. oven 350' covered with tinfoil for 25 minutes. then uncover for another 10 minutes. then broil for 2 minutes to brown.

{ceasar salad} dressing recipe

Mmmmm...ceasar salad is one of my families favourite!~ Here is a great quick recipe certain to please everyone....
1/2 cup grated parm cheese
1/4 cup mayo (i use 1/2 fat olive oil version or plain yogurt)
1/4 cup extra virgin olive oil
2 tbsp white wine vinegar
1 tbsp worcestershire sauce
1 tbsp fresh lemon(I put extra~love lemon)
1 tsp anchovy paste
1 garlic cloves crushed
fresh pepper
whisk together! and dress your salad....

I'm amazed each year on the quantity of saskatoon berries that our little bush produces....my kids are forever eating and picking. This day we all pitched in along with our friends O&O to pick some to make some muffins. I made the girls a fresh fruit slushie drink along with muffins for snack time. Then they set up a booth in our driveway to sell their wares. They sold muffins, beaded items...they had signs, tip jar and more....(I warned the mom's who were picking up to bring their loot) They even hit up daddy on his way home. Funny how I even had to spend money on items I paid for in the first place....summer day fun!
Slushie: easy easy ...I used lots and lots of ice,,, a little water and fresh fruit, and 1 tbsp of juice concentrate ( I used limeade here with fresh strawberries/blueberries)

hot pink smoothies.....our healthy breakfast!~ here is the recipe!~I love love these! I also add ice to make it extra cold. and as always I make in my blendtec blender

Hot-Pink Breakfast Smoothie

  • 1 ½ cups young Thai coconut juice (best raw, or from a can, both can be found at Asian markets and health food stores)
  • 1 large carrot, cleaned and cut in 3 pieces (or 5-6 baby carrots)
  • ½ a medium raw beet, peeled
  • ¼ cup cashews
  • ¼ cup chopped dates (inexpensive in bulk foods at a health food store)
  • 2 tsp. vanilla
  • 12 frozen strawberries
  • optional: 1-2 Tbsp. hemp protein (available at health food stores or on Amazon)
  • optional: 2 Tbsp. kefir or yogurt
Puree all ingredients except strawberries and hemp protein in BlendTec for 90 seconds. Add strawberries and puree on high until smooth. Add hemp protein for the last 5 seconds.


Notes:
I have been drinking this every morning for five years, just because I love it! the girls had sooo much fun learning the in/outs of tennis...a skill Kent and I will be happy they have...we can play instead of being ball retrievers. They had a great instructor Alex Dodd...this program is run out of our local rec centre...be sure to check it out next summer.

My sweet baby girl turned 8 in july...where or where does the time go!~ we've been watching the videos we took of the kids over the past couple of weeks. At age 2; Makenna was always dressed in pink, a dress, pretty hair and some sort of fancy shoes on~and she was always showing off her lovely dance moves. Well not much has changed except she doesn't like to wear dresses...but still prefers PINK!~She is a bit shy but always sweet and kind.

a 10 minute 4x4 ride in to this private field overlooking a beautiful little lake with this tree!~amazing venue for a wedding to express your love for each other...I know the rain stopped for this day due to this couple's amazing faith~ I love how they decided on their own ways to express their faith and union in the ceremony (with their foot washing ceremony)

okay I'm not too good about getting photos of all 5 of us....it's tough Kent really really doesn't like having his photo taken....of course unless he's doing something stupid. But none the less...here is all 5....on the top of a little hike we did last weekend while away for the long weekend with friends...I've been so busy this week this is the first time to look at these pics....lots of great memories. the lavington crew....(and their wives and kids) we made a total of 23 people. Wowsa!~great time....my kids will have amazing memories of their adventures with all this crew. They loved their time with their cousins, Hannah & Brennan!:) already planning what adventures we will have next year on our annual Lavington weekend.
Yes it was sunny and hot! We soaked in as much as we could!
finally a hot type weekend here...so we're off to Nana & Grandpa's house for  a weekend of sunshine soaking up!:)

one of the best parts of summer is the weekly box of organic local fruit and veggies I receive weekly....wow! ~the taste of these items is beyond delicious....it's pretty hard to go back to regular store bought veggies once summer is over....Mackin Creek Farm does an amazing job...check them out here.
